The rest are repeat problems many of us Bedrock players have. Villagers despawning is real. Best advice is to try to build places where villagers aren't right on chunk borders or where they won't be regularly crossing chunk borders. Name tags also seem to help. Other than that, just bugs. Real irritating bugs.
Villagers with beds and workstations should not despawn. villagers can't despawn, boats is to help transport villagers, villagers can die and zombie villagers can despawn, if your villagers are dying boats won't help.
On one second only. The reason is a bug that any mobs aren't spawning after some time. For example when we visit our village with much villagers and animals, spawning of hostile mobs stopping until we restart it by switch to peace mode and back to normal. Then our ender farm dont works - either endermans are not spawning or endermite is despawn.
Summon a baby zombie riding a chicken. Baby zombies have an additional 5% chance of spawning as a chicken jockey in Java. But here is the summon chicken jocky command if you want to make it happen. Could really use some help. They're obviously not meant to. I saw Mumbo Jumbo having a similar issue with his zombie villagers. So I'd say it's definitely a bug, and a big one for sure.
